Cream Cheese Bruschetta with Blueberry Compote

This is the appetizer I served for the mid-afternoon party of my office friends. I was really pressured but I’m so glad they liked what I served them! *whew*

Due to time constraints, I was not able to take pictures and instead, requested friends to let me grab theirs.  I was in a rush the whole day, trying to get things done without skipping work. TAKE NOTE: I didn’t skip work and yet I served my dishes right on time baby!

Anyhow, here goes…

This is so easy to make. You’ll need:

  • French bread/baguette/whole wheat loaf is also fine
  • Yogurt
  • Cream Cheese/Goat Cheese
  • Blueberry compote/blueberry preserves may also work
  • Pecan
  • Caramelized onions (optional)

Cut your French bread into desired size and shape. I made it 1/2inch thick. Brush both sides with unsalted butter then put on your stove-top grill. Let cool for a while then spread your yogurt cream cheese mix. I used a 1:1 proportion, i.e., 1 tbsp of yogurt : 1 tbsp of cream cheese. Top it with your blueberry compote. I intended to add caramelized onions but couldn’t do it anymore because I lack time 🙁 Instead, I just finished it with a piece of Pecan on top.

This is really yummy. The saltiness of the cheese, the sourness of yogurt, the sweetness of the blueberries, and the nutty flavor of the pecan! Gosh, what else can go wrong with that? 🙂
