What’s your breakfast?
In our household, breakfast ain’t complete without rice. And what better way to pair rice than with ground beef and eggs and bananas!
Arroz a la cubana or arroz cubano (translated as Cuban-style rice) is actually a Spanish dish consisting of rice, fried egg, and tomato sauce and is a dish that is popular in the Philippines and Peru. The Spanish version consists of a serving of white rice with tomato sauce and a fried egg. The Philippine version consists of rice, ground beef, a fried egg and saba (a native plantain), sliced length-wise and fried. In Peru, it is common for the dish to consist of white rice, fried bananas, a fried hot dog, and a fried egg over the white rice.
- Steamed or boiled rice
- 1/2 kilo ground beef (use sirloin or top round)
- 2 carrots, cubed
- 2 potatoes, cubed
- 1/2 c. of sweet peas
- 1 bell pepper, chopped
- 2 tbsp. of raisins (optional)
- 1 tbsp. minced garlic
- 1 onion, chopped
- 2 tomatoes, chopped
- 1/4 c. of tomato paste
- 3 tbsp. of olive oil
- 1/4 c. vegetable cooking oil
- salt and pepper to taste
- eggs, fried sunny-side-up
- saba (plantains), each sliced diagonally into 3, fried
Heat up a pan and drop in the cooking oil. Add the potatoes and carrots and fry until edges turn light brown. Take out from the pan and drain on paper towels.
Remove the oil, add in the ground beef and loosen it up. Cook over high heat until the meat is brown. Add garlic, chopped onions, bell peppers and raisins. Stir just until the vegetables start to soften. Add the tomato paste, salt and pepper. Continue stirring. Add the green peas, carrots, and potatoes. Stir and cook until the vegetables are done.
Serve with rice, an egg, and fried saba on the side.
Preparation time is usually between 30-45 minutes. It’s a very filling (heavy) breakfast but really delish! Enjoy!
P.S. Please don’t be surprised to see a lot of rice dishes in my blog. I’m a certified rice eater and as much as they keep on saying to cut down on rice, it is one of the hardest things to do 😛
