    Lia's Cakes

If Max’s is the house that chicken built, then Lia’s Cakes is the house that avocado built 😀 Man, that’s avocado right there! In a cake!!! I don’t have enough words to describe it. It probably isn’t the best cake anyone would ever try but the cake itself is moist and flavorful and will sure make any avocado lover scream for joy. And for the non-avocado lovers, don’t worry. The best time to change your mind is now. The avocado flavor isn’t too strong, it won’t scare you away. I promise, it’s really good and there’s no better way to lose your avocado-virginity than to this sexy cake, baby! 😀…

It Takes Two To Make A Thing Go Right: Same Batter, Two Cupcakes ~ Chocolate and Ube

So, I got this recipe for a chiffon cake from my weekend basic cake and cake decoration class and I used that to make cupcakes. I was hoping I could make a real cake today with icing and all the works but my plan didn’t push through. There’s always a next time for that though. Meantime, I made gorgeous cupcakes today using, as I said, the chiffon cake recipe I recently learned. The cupcakes were moist, soft and really flavorful. I am so excited to try out the other variations and there are tons of them! So, using the same basic cake batter and egg white mixture, I created two…

Chocolate Loaf Cake with Choco-Caramel Ganache

I am currently in search for the best chocolate cake recipe. I know that it is impossible to claim only one chocolate cake recipe as the best especially that food, like beauty, is in the eye of the beholder. That is why I wouldn’t normally buy any random online link that says “The Best Moist Chocolate Cake Ever.” I most probably will be clicking on a link that says “Decadent Chocolate Cake” rather than one that claims to be the best. See, I’ve been a victim too many times of these links. Just last Sunday, I made a chocolate cake following the recipe claimed to be the best when it…

    Apple Carrot & Walnut Cupcakes

I haven’t been baking in a long while and I thought why not make use of my leftover carrots and apples?! I found this recipe for Carrot Cupcakes from Joy of Baking. The blog post said the recipe will make moist and delicious cupcakes. I had second thoughts at first because I have been following recipes from blogs and I never had a very successful experience yet to date (that means, I still need to adjust some stuff to arrive at the outcome I want). But… when I tried this recipe and the cupcakes came out, man, they’re really moist and delicious! I’m so stoked to share this recipe with…

    Champagne Cupcakes with Choco-Dipped Strawberries

They look so rugged. So messy. But the more I look at them, the more they grow pretty to my eyes. My personal mantra is:  LOVE YOUR OWN 🙂 Just so you know… Seriously, I will have a re-match with the styling part of the cupcakes. Promise. I got the original recipe from Annie’s Eats. Lovely, lovely site. There are really lots of wonderful recipes there. You can actually compare our photos. The normal scheme of things would be that if you compare “before” and “after” photos, the “after” should be a huge improvement of the “before.” Unfortunately here, that’s not the case. My “after” looks terribad compared to Annie’s…

    Lemon Buttercream Frosting

I used to love mixing chocolates with mint. Now, I’m so into mixing chocolates with something citrus. Previously, I made decadent chocolate cupcakes and smothered them with cream cheese calamansi sauce. You can find the recipe here. For the mid-afternoon office party yesterday,  I made the same decadent chocolate cupcakes but used a simple lemon/calamansi buttercream frosting instead.   photo of my cupcakes by Happy Trails
