Here’s another healthy and easy chicken dish for people out there who, like me, are on a diet π I’m really glad I learned how to cook because it gives me the chance to channel my passion for cooking into creating something good and healthy. Like this dish for instance! In case you don’t know, Piccata is an Italian word that references a way of preparing food. It means sliced, sauteed and served in a sauce containing lemon, butter, and spices, usually parsley. Chicken Fillet Inasal
As I mentioned in my Myriad Monday #2 post, today’s our Diet Day 1 π Since we’re not technically following a program but are just eliminating rice and cutting down on sugars and sodium, we’re still free to eat what we want as long as it’s a balanced healthy meal. For dinner tonight, I made chicken fillet inasal (grilled chicken with light anatto oil) and I served it with salad greens with strawberry vinaigrette, light cheddar melt on button potatoes, and seedless grapes.
