    Caramel Chicken

I was looking for another easy chicken dish recipe and I bumped into this great one from Almost Bourdain. She got the recipe from Bill Granger and I’m so happy to have found the recipe too ๐Ÿ™‚ย  It was simple and perfect with rice! I prepared the dish last night and hubby was already asking for a repeat. I don’t mind doing it again because I only need an hour to prepare and cook the entire dish. This is really a great dish to make when you don’t have much time.

Creamy Chicken Spaghetti With Carrots and Cauliflower

I haven’t been cooking much lately. I’m busy at work and with PinoyFoodista and I feel like I’m not touching base enough with this blog and my blogger friends ๐Ÿ™ I promise that as soon as PinoyFoodista is stable (shouldn’t take that long, I hope), I’ll be more visible again ๐Ÿ™‚ So, in one of those rare instances that I find time to cook, I made something easy out of what I already have in the kitchen. I call it Creamy Chicken Spaghetti with Carrots and Cauliflower. The dish is as literal as its name ๐Ÿ˜›

    Quick & Easy Chicken Quesadillas

If you noticed, I have been making a lot of easy and simple chicken dishes lately. And to save myself from getting bored with chicken breast fillets, I try as much as I can to make different dishes out of it. One of my favorite simple chicken dishes to make is chicken quesadillas. Quesadillas are always popular at home becauseย they’re tasty and flavorful, and also very easy to munch on. You can just pick up a slice and enjoy it as you read a book or watch TV or do whatever. I personallyย love making quesadillas because they’re easy to assemble and they’re reallyย a great way to make use of items…

    Saucy Chicken Marmalade

I should have posted this a week ago but something went wrong with the photos. I lost all of them andย was only able to recover one ๐Ÿ™ Anyhow, let me share with you an easy chicken dish that’s akin to the usual Orange Chicken minus the flour batter that covers the chicken cutlets. The recipe is good for 4 servings and each serving has only 213 calories. This one’s good for people on a diet or those who are watching their calorie intake ๐Ÿ˜€ Here’s my version of Saucy Chicken Marmalade ~ ย

    Perfect Roasted Chicken

Who loves Ina Garten and her show/cookbooks Barefoot Contessa? Raise your hands! ๐Ÿ˜› I really love Ina Garten and it makes me sad that I couldn’t catch her shows here anymore… damn cable operator. On a brighter side, I still have her cookbooks and she’s online! Last Saturday, my parents came over for dinner and I prepared Ina Garten’s Perfect Roast Chicken for them. With a little adjustment (I took out fennel because I didn’t have time to go to Santi’s and used leftover raw potatoes instead! *gasp, what was I thinking*), I still managed to make a real juicy perfect roast chicken ๐Ÿ™‚ I think the photo makes it…

Chicken & Green Beans With White Wine Vinegar

This is another chicken dish that’s easy to prepare. If you noticed, I’ve been posting a couple of chicken recipes here. I happen to join my friends on a no-rice diet and the chicken dishes are my best options to allow me to stick the diet without feeling deprived ๐Ÿ™‚ I used green beans and white wine vinegar for this dish. It’s really simple, you’ll see.

Chicken & Water Spinach With Oyster Sauce

I don’t remember exactly when I started to eat kangkong (water spinach or swamp cabbage) but I’ve learned to love it as life went on such that if you ask me now to name a green leafy vegetable, for sure, it is the first vegetable I’ll mention. I love it steamed, or in sinigang, or cooked adobo-style, or coated with some batter and made into crispy kangkong. But most definitely, I love kangkong in oyster sauce. In fact, I already posted a recipe for it about four months ago. They say that kangkong is a good source of lutein and pro-Vitamin A. Also, it has a significant amount of calcium…

Milky Chicken With Carrots & Mushrooms

This is one dish that I just came up with based on what I have in my cupboard and ref. Not really a leftover cleanup but more like cooking with what I have , hah ๐Ÿ˜› I’m always on the lookout for easy-to-cook chicken dishes for our diet club *grin* I get bored pretty easily having to eat chicken fillets over and over again so I’m really trying my best to change chicken dishes everyday. Here’s another spin on those otherwise boring white skinless chicken breast fillets — My version of Milky Chicken with Carrots & Mushrooms ๐Ÿ™‚

    Chicken Empanada

My favorite chicken empanada is the one from Red Ribbon. Yup, chicken empanada with extenders and all that ๐Ÿ˜› I can always imagine eating that soft empanada crust with mashed chicken filling (sorry but I can’t seem to find chicken bits inside) or mashed potatoes with chicken seasoning ๐Ÿ˜› Whatever, it’s still the best chicken empanada for me though. Today, I decided to make my own chicken empanada as my way of being thankful that I’m no longer feeling under the weather. I was sick since Sunday evening and now that I’ve recovered, I’m back to business. By business I really meant cooking ๐Ÿ˜› What I’ll show you aren’t the…

    Chicken Piccata with Capers

Here’s another healthy and easy chicken dish for people out there who, like me, are on a diet ๐Ÿ˜› I’m really glad I learned how to cook because it gives me the chance to channel my passion for cooking into creating something good and healthy. Like this dish for instance! In case you don’t know, Piccata is an Italian word that references a way of preparing food. It means sliced, sauteed and served in a sauce containing lemon, butter, and spices, usually parsley. My version of chicken piccata is healthified and Filipinized, if there are any such words ๐Ÿ˜› It’s healthified because I didn’t use butter but 0% cholesterol and…
