Crabs in Coconut Milk
Last Saturday was Mom’s birthday and as promised, I prepared lunch for her. Initially, I planned a gourmet-ish 5-course menu but Mom, being the simple easy-to-please and not-so adventurous mom, didn’t think she’ll be able to eat more on her birthday if I follow my menu. I asked her what she wanted and she said she wants crabs and shrimps.
Due to time constraints and change of plans, I decided to make easy-to-prepare dishes and for the crabs, I thought of cooking them in coconut milk.
Here are the ingredients:
-
1 kilo of crabs (our crabs are so petite :P)
-
grated meat of one coconut
-
green chili
-
2-3 cups of water
- ginger
- onions
- garlic
- salt & pepper to taste
Boil water and pour over the coconut meat. Let the meat soak in the hot water til the water is lukewarm. When lukewarm, the coconut is ready for milking. Strain the coco-water mixture and squeeze a handful of the coconut meat at a time to get the milk.
In a pot, saute the garlic, onions, and ginger. Add the crabs. Pour the coconut milk. Bring to a boil.
After boiling, drop the green chilis. Simmer for about 5 minutes or until the coconut sauce is reduced.
Best served with a hot bowl of rice 🙂
Enjoy!
