Old Bay Shrimp Salad
This is the second of my two entries for Pinoy Foodista Cooking Challenge for January 2011. The first one is my Chicken Adobo Salad with Pineapple Vinaigrette.
I’ve always wanted to use the Old Bay Seasoning given by Mindy for my first Foodie Exchange. And there’s no better way to use it than with shrimps. Hence, my very simple version of the Old Bay Shrimp Salad.
Here are the cast of characters:

1 lb. shrimps

1/2 cup light mayonnaise

1/3 cup chopped celery

8 oz. pineapple chunks

3 tsps. Old Bay Seasoning

lettuce
-
bread (optional)
First step is to cook the shrimps in a cup of water with 1 tsp. of Old Bay Seasoning. Let the shrimps cook for about 5 minutes or until the shells turn into red. When cooked, remove the shells and set the meat aside.
Next, mix the mayonnaise, celery, pineapple, and the remaining 2 tsps. of Old Bay Seasoning in a Bowl.
Mix in the shrimps and refrigerate for about 20-30 minutes before serving. When you’re ready to serve, get some lettuce and arrange as a salad bed on a plate. In my case, I used some of my mini rice bowls with coconut covers because they’re cute 🙂
And there you have it, your Old Bay Shrimp salad which is sooo delish! You can actually add raisins and nuts for added texture but even without them, the salad is already yummy by itself.
You can devour your salad as is or you may serve it on a piece of bread.
My husband loves it as a sandwich and here’s his second serving.
