Grilled Chops with Barbecue Peanut Sauce
Do you notice how much we love barbecue in our household? 😀 Anyways, if it’s not that obvious yet, I hope this post will open your eyes to that fact.
For lunch today, I prepared Grilled Chops with Barbecue Peanut Sauce and I served it with fresh tomato salsa and java rice.
Boy, it was damn heavy but an overall wonderful lunch.
Grilled Chops
- 1/2 k pork chops
- 1/4 c barbecue sauce
- 1/8 c brown sugar
- 1/8 c white vinegar
- salt and pepper
Mix all the marinade ingredients together and marinate the pork chops for at least an hour before grilling.
Fresh Tomato Salsa
- 3 medium tomatoes
- 1/2 small red onion
- 1 pc. jalapeño
- 1 pc. medium green bell pepper
- 2 pcs. chili (depending on how hot you want it to be)
- juice of 1 lime
- salt and pepper
Chop the tomatoes, onion, peppers and chili. Squeeze a lime and add a dash of salt and pepper. Mix well.
Java Rice
- 1 T olive oil
- 1 small red onion
- 1 red bell pepper
- 2 cups cooked white rice
- 1/2 c ketchup
- 1/2 c light soy sauce
- salt and pepper to taste
Heat up oil. Saute the onion and bell pepper. Add the cooked rice and stir well. Next add the ketchup and soy sauce and mix well. Season to taste.
Barbecue Peanut Sauce
- 2T unsalted butter
- 1/2 c barbecue sauce
- 1 T peanut butter
- juice of 1 lime
- 1/4 c brown sugar
- salt and pepper to taste
In a pot, melt the butter. Throw in the barbecue sauce and peanut butter. Let simmer. Add in the juice of 1 lime and bring to a boil. Add salt and pepper to taste. Remove from heat and add brown sugar if you like it sweet.
I used Clara Ole hickory barbecue marinade for all the barbecue sauce requirements for today and I’m happy with it 🙂
I have a feeling that I’m getting lazy lately (hence the need to use “instant” ingredients). I wonder where this “stressed” feeling is coming from. On a good note though, because of this lunch, hubby stayed with me the whole day at home today 🙂
