Anyhow, let me share with you an easy chicken dish that’s akin to the usual Orange Chicken minus the flour batter that covers the chicken cutlets. The recipe is good for 4 servings and each serving has only 213 calories. This one’s good for people on a diet or those who are watching their calorie intake 😀
Here’s my version of Saucy Chicken Marmalade ~
- 1 cup reduced sodium chicken broth
- 2 tbsp. red wine vinegar
- 2 tbsp. orange marmalade (I used Clara Ole Orange Marmalade)
- 1 tsp. Dijon mustard
- 1 tsp. cornstarch
- 1/2 kilo chicken fillets
- 1/2 tsp. Kosher salt/rock salt
- 1/4 tsp. ground pepper
- 6 tsp. extra virgin olive oil
- 2 large onions, chopped
- 1 tsp. orange zest
Whisk broth, vinegar, marmalade, mustard and cornstarch in a bowl.
Meanwhile, sprinkle chicken fillets with salt and pepper. Heat 4 tsp. oil in a large skillet over medium-high heat. Add the chicken and cook until golden, about 2 minutes per side. Slice into cubes, transfer to a plate and cover with foil to keep warm.
Add the remaining 2 tsp. oil and onions to the pan and cook, stirring often. Whisk the broth mixture and add it to the pan. Bring to a simmer, scraping up any browned bits. Reduce heat to maintain a simmer and cook until the sauce is slightly reduced and thickened, 30 seconds to 2 minutes. Add the chicken cutlets and continue to simmer. Cook until the chicken is heated through. Remove from the heat and stir in orange zest.
Serve and enjoy! 🙂
